Stir Fry Almond Chicken Recipe

Stir-fry almond chicken is a unique stir-fry that features a really unique combination of flavors. The chicken is marinated in a delicious marinade, then cooked in a cast iron pot. The chicken is crispy and tender on the outside, yet juicy and full of flavor on the inside.

Stir Fry Almond Chicken Recipe

This delicious chicken, vegetable, and almond stir fry dish is made with a light oyster sauce and poultry. Almond Chicken is a quick, simple, and tasty way to get supper on the table.

Ingredients

1 pound chicken, chopped or sliced into bite-size pieces    
12 tblsp. soy sauce    
oyster sauce (two tablespoons)    
1 tablespoon vinegar (rice)    
sugar (one spoonful)    
2 garlic cloves, minced    
1 tsp. pepper flake for a spicy stir-fry (optional)    
1 hour of marinating    

Regarding the veggie

1 celery stalk, finely sliced    
1/4 cup finely sliced white onion    
1 finely sliced tiny carrot    
a third to half cup of roasted almonds    
1/3 to 1/2 cup chicken broth (no salt) or water    
1 green onion, finely chopped    
2 tblsp. oil for stir-frying    

Stir Fry Almond Chicken Recipe Instructions

  1. Heat a wok or a frying pan until it’s very hot.
  2. Add the oil to the pan, then add the marinated chicken (together with all the marinade liquid) and carrots, and stir fry for approximately 3 minutes, or until the marinade liquid has evaporated and the chicken is no longer pink, but not cooked.
  3. Now add the celery and some chicken stock or water to the pan and stir well until the chicken is nearly done, then add the white onion and toss well until the chicken is done.
  4. Turn off the heat and stir in the roasted almonds and green onion in the pan.

Serve immediately with steaming rice. This recipe may also be made using cashew nuts.
