4 to 5 cups water spinach or Trokoun, cut into 1 inch long stems    
8 oz. minced pork, shrimp, chicken, or tofu, as desired    
oyster sauce (two tablespoons)    
2 tablespoons soy sauce or fish sauce    
1 tbsp sugar (about 1 tbsp sugar)    
1–2 tablespoons fermented soy beans    
3 minced garlic cloves    
2 tablespoons of olive oil    

Morning Glory Stir Fry Instructions

  1. Heat the oil in a hot wok and stir cook the garlic until it browns.
  2. Cook until the pork, shrimp, or whatever you want is no longer pink.
  3. Cook until the spinach stems are soft, adding a little water if necessary.
  4. Mix in the soy sauce or fish sauce, sugar, oyster sauce, and soy bean until well combined. (If the mixture is salty, add a spoonful of everything at a time.)
  5. Add the leaves and stir fried rapidly. Water spinach cooks quickly, so don’t overcook it.
  6. Taste and adjust before turning off the heat.

Serve with rice that has been prepared.
