The origins of the Cobb salad

When you visit Disney’s Hollywood Studios, you may dine at the Brown Derby restaurant. It’s eerily similar to California’s famous Brown Derby. Of course, The Brown Derby’s trademark dishes must be included on Disney’s menu.

The Cobb Salad is one of the most well-known dishes on the menu. What is the history of Cobb Salad? What is the significance of the Brown Derby in the history of the salad?

It became a trademark dish at the Hollywood Brown Derby restaurant in 1937. Robert Howard Cobb, the restaurant’s proprietor, provided the inspiration for the name. Cobb had not eaten since about midnight, according to tradition, so he combined leftovers from the kitchen, along with bacon fried by the line cook, and tossed it with their French dressing.

Recipe for Cobb Salad Dressing

The dressing shocked me when I tried the renowned Cobb Salad at Disney’s Brown Derby. I was aware that French dressing is utilized in a Cobb Salad dish. The French dressing, on the other hand, was quite different from what I was accustomed to.

The original cobb salad dressing recipe isn’t as brightly colored as the ones I’m accustomed to seeing in shop bottles. The hue was more of a brownish hue.

Furthermore, the cobb salad dressing lacked the tart tomato flavor. I preferred the original Cobb salad dressing recipe to the bottled French dressing I had been using.

Ingredients

Salad

  • 1/2 iceberg lettuce head
  • half a bunch of watercress
  • chicory, 1 little bunch
  • 1 romaine lettuce head
  • 2 medium blanched and peeled tomatoes
  • 1 1/2 cups chopped cooked turkey breast
  • 3 hard-boiled eggs
  • 1/2 cup crumbled blue cheese
  • 6 slices crumbled crisp bacon
  • 2 tblsp. chives, chopped

French Dressing

  • 1 cup of water
  • a half teaspoon of sugar
  • 1 1/4 teaspoons of salt
  • 1 1/2 tablespoons Worcestershire sauce (optional)
  • 1 garlic clove, chopped
  • a half-cup of red wine vinegar
  • 1/2 lemon’s juice
  • 1/2 teaspoon black pepper, ground
  • 1/2 teaspoon mustard (English)
  • 1/2 cup extra virgin olive oil
  • 1 1/2 cup salad dressing

Instructions

Dressing Ingredients

  1. Except for the oils, combine all ingredients in a blender.
  2. Then mix in the olive oil and salad oils well.
  3. Blend one more before adding to the salad.

Cobb Salad

  1. Toss all greens together in a salad dish (save some watercress for display).
  2. Tomatoes should be cut in half, seeds removed, and diced finely.
  3. Dice the turkey, avocado, and eggs as well.
  4. Arrange the aforementioned ingredients in straight lines across the greens, along with the blue cheese and bacon crumbles.
  5. Arrange the chives in a diagonal pattern across the lines above.
  6. Toss the salad with the dressing once it’s on the table.
  7. Serve with a watercress garnish on cold plates.
