These marbled hard-boiled eggs are one of my favorites. They are popular among street sellers all across China because they are beautiful to look at, delicious to eat, and simple to prepare. You don’t need to add the spices or soy in this recipe to create as many tea eggs as you like; just make sure the eggs are cooking in a single submerged layer. The more time you soak them after they’ve been simmered, the more apparent the marbling becomes and the better they become.

Note that you should start this preparation at least 6 hours ahead of time (the longer the better!) since the eggs require time to steep.

  • Step No 1

    Place the eggs in a single layer in a saucepan and cover with cold water. Bring the water to a boil over medium heat. Cook for 6 minutes on a low heat, stirring occasionally. Remove from the heat and chill under cold running water until you can handle them.

  • Step No 2

    One egg should be cupped in the palm of your hand. In the other hand, gently tap the egg all over with the back of the spoon to create plenty of small cracks while maintaining the shell on the egg. Rep with the remaining eggs.

  • Step No 3

    Return all of the eggs to the pan in a single layer and cover with just enough cold water to cover. Return the pot to a medium heat and add the soy sauce, tea leaves, sugar, star anise, cinnamon stick, peppercorns, and tangerine peel. Bring to a boil, then lower to a low heat and cook for 2 hours, covered with a lid. Check that the eggs are still immersed from time to time, and fill them with a spray of water if required.

  • Step No 4

    Allow to cool in the tea liquid after removing from the heat. Transfer to the fridge and allow to infuse for at least 6 hours; they will keep for up to 3 days in the fridge. They will get stronger and more salty as they soak longer. Simply peel and eat when you’re ready to dine.
