Thai Cauliflower Fried Rice with Chicken

This recipe is one of those recipes that you would think would be very difficult to make, but it is actually quite simple, and the more you practice, the better you get at it. Especially if you are preparing it for your friends and family.  It’s that tasty.  You will know if you have done it right by the fact that your friends and family will thank you for making them this tasty dish.  I’m not sure if this is the actual name of the dish or if this is just another name given to it, but it sure is a delicious dish.   You can prepare the dish in advance and then just heat it up when you wish to serve it.

This is a quick and easy Thai Cauliflower Fried Rice with Chicken that you can make in under 30 minutes, using only a few simple ingredients. It makes a great lunch as well as a great dinner with the addition of some steamed or sauteed green vegetables, or even some stir-fried vegetables.

Fried rice is one of those dishes that almost everyone has tried or at least heard of. It’s a simple dish made of rice cooked in a seasoned oil, usually with vegetables and meat, and unlike most other stir-fried rice dishes, it’s usually served with a sauce. The great thing about fried rice is that you can put pretty much anything in it, which is why it’s so versatile.

Fried rice is one of those meals that combines comfort and taste in a single bowl. Fish sauce and soy sauce spice give Thai fried rice its distinct taste. I used half of the fish sauce and substituted the soy sauce flavor with Coconut Aminos in an effort to make this meal lower in salt and gluten free. Cauliflower rice replaces rice and offers a comparable feel without the guilt of consuming a whole bowl of rice.

Riced cauliflower may now be found in the frozen veggies area or packaged in the produce section. You can also create it at home by pulsing raw cauliflower florets until they resemble rice grains in a food processor. I like the texture of homemade cauliflower rice, but I’m generally in a hurry and need a fast and nutritious dinner, so pre-made cauliflower rice suffices.

If you want to use frozen cauliflower rice, I suggest microwaving it for approximately 2-3 minutes before straining it with paper towels to remove any extra water. This keeps the fried rice from getting overly watery. The frozen peas and carrots may also be microwaved for a minute until they are partly reheated.

This recipe calls for chicken, but you may substitute whatever protein you like: beef, pork, sausage, Spam, shrimp, or go vegetarian and leave out the meat entirely. The decision is yours, and you can be as creative as you want. Serve the rice with a squeeze of lime and a dash of spicy siracha sauce. Thai fried rice is often accompanied with sliced cucumbers. This recipe serves approximately 6 people and may be kept in the fridge for a couple of days.

Instructions 

  • If using frozen cauliflower and vegetables, cook for 2-3 minutes in the microwave until slightly warmed. Then pour any liquid into a strainer lined with a paper towel. If you’re using fresh cauliflower rice, go on to the next step.

  • Set aside 1 tablespoon of Coconut Amino after slicing chicken or other protein of your choice.

  • Set aside the remaining 2 tablespoons of Coconut amino and 2 teaspoons of fish sauce.

  • 1 tablespoon oil, heated in a large wok over medium high heat Cook until the chicken is fully cooked.

  • Remove the chicken and return the remaining oil to the pan, along with the onions and garlic, and cook until tender. It takes around 2 minutes. Then add the eggs and let them sit for a minute before scrambling them.

  • Toss in the cauliflower rice, peas, and carrots, as well as the sauce. Stir everything together well.

  • Return the cooked chicken to the pan and stir to mix. After that, season with white pepper. It’s time to serve once everything is heated. Taste to determine if you need to add more soy sauce or fish sauce.

  • Serve with sliced cucumbers and green onions and a squeeze of fresh lime.
