Instructions:

Filling

  • Cream together cream cheese, sour cream, heavy whipping cream, and erythritol using a hand mixer.

  • Fill cupcake molds/tins halfway with filling and chill for 2-3 hours or freeze for 1-2 hours.

Ganache

  • Melt the baker’s chocolate and heavy cream together in the microwave. Gently fold in the chocolate until it is totally melted (this may take 1-2 minutes)

  • Mix with a splash of water until you get a thick liquid consistency.

  • Pour over the tops of the frozen cheesecakes and eat!

This no bake cheesecake recipe has been requested a lot lately, so I thought I would post it. It is my favorite cheesecake recipe because it is so easy to make and tastes great! The only time consuming part is baking, which can be done while the cheesecake is still in the oven. (I am sure this will depend on your oven’s temperature, but a general time frame of an hour to an hour and a half is how long I have found that I can get a cheesecake to bake in my oven.).
