Warm the cream and almond milk in a large saucepan over low heat, stirring constantly with a wire whisk. Whip in the egg yolks until they are barely foamy.

Continue to whisk over low heat until the mixture reaches 140°F (60°C), or until it thickens and coats the back of a spoon.

Whisk in the sweetener until it is completely dissolved in the cream mixture. Combine the vanilla and salt in a mixing bowl. Remove from the heat and place in the refrigerator to chill. Make the cookie dough while the ice cream mixture cools.

Remove the ice cream mixture from the refrigerator and place it in the ice cream machine. Follow the instructions provided by the manufacturer. If you don’t have an ice cream machine, place the mixture in a freezer-safe container and freeze it. It should be stirred on a frequent basis until it freezes.
