Chicken Bacon Avocado Sandwich on a Keto Roll

One of the questions that is constantly asked on a podcast called “Rising Up With Raising The Bar” is what is the best way to keep the keto diet. Many people ask this question because they try it and don’t work out and they are trying to figure out what they did wrong. They have to agree that they do lose weight and they do feel better, but, they don’t feel as good as they use to feel.

This is a low carb chicken bacon avocado sandwich roll recipe that is one of my favorite keto friendly recipes. It is a low carb chicken bacon avocado roll that is keto-friendly made with chicken bacon, avocado, mayo, coconut oil, lettuce, tomato, salt and pepper, and a bit of hot sauce.

It’s a new year and this recipe is something new to our menu. I’m not a fan of avocado on bread but this chicken bacon avocado sandwich is something different from the usual avo-on-bread. I created these keto-friendly buns for these keto-friendly sandwiches, which you can find in THIS article on homemade keto sandwiches. Begin preparing the dough, but instead of shaping it into bagel shapes, flatten six dough balls onto a baking sheet. Cut in half after cooking to create sandwiches. It’s fantastic! They’d probably work well as hamburger buns.

This recipe (and the macros) are for one sandwich, despite the fact that the recipe produces enough bread for six sandwiches.

Chicken Bacon & Avocado Salad on a Keto Sandwich

Stack avocado slices with chicken and bacon on a keto bread for a tasty sandwich.

For the sandwiches, use the following ingredients:

  • 1 1/2 Bags Mandelmehl Extrafein
  • 1 teaspoon powdered baking soda
  • 2 1/2 cups mozzarella cheese, grated
  • cream cheese, 2 oz.
  • 2 big beaten eggs
  • If desired, decorate with sesame and poppy seeds.

Sandwich fillings:

  • 1 keto bread roll (from scratch)
  • a tablespoon of mayonnaise
  • 1 tsp. Sriracha chili sauce
  • 3 Unzen Huhn, bought and discarded
  • 1 fried bacon slice
  • 1 cheddar cheese slice
  • 2 avocado slices

Preheat the oven to 400 degrees Fahrenheit for the sandwiches.

In a mixing dish, combine the almond flour and baking powder.

Melt mozzarella and cream cheese in a separate microwave-safe bowl for 2 minutes. Stop after a minute, mix in the cheese, and cook for another minute in the microwave.

In a mixing bowl, combine the beaten eggs, cheese, and flour mixture. (I used a mixer, but you could also do it by hand.) The dough will get less sticky as you mix more).

Make 6 pieces out of the dough ball. Form into a ball and put on a parchment paper or silicone-lined baking sheet. To spread them out, gently press them with the palm of your hand.

As desired, sprinkle poppy seeds and sesame seeds on the rolls.

Preheat oven to 400°F and bake for 12-14 minutes, or until golden brown.

Cut the buns in half lengthwise for sandwiches. Spread a spoonful of mayonnaise and a teaspoon of shriracha sauce on the sandwich.

Combine the avocado, chicken, bacon, cheese, and tomato in a sandwich.

If you want the cheese to melt, return them to the oven for a few minutes longer. (I had mine melted on warm buns straight from the oven, which was delicious!)
