- 12 CUP OLIVE OLIVE OIL
- 4 garlic cloves, minced
- 1 tblsp. salt
- 1 teaspoon black pepper, cracked

In a big resealable ziploc bag, combine all of the ingredients. To coat evenly, give it a good shake. Refrigerate for at least 1 hour or up to 24 hours before serving.

Preheat the oven to high broil.

On medium-high heat, heat a cast iron skillet. Remove the meat from the ziploc bag and put it on the pan, discarding the remaining marinade.

Cook for 5 minutes, or until both sides are seared. Then take the skillet and place it under the broiler in the oven. Cook for a few minutes, or until the meat’s edges start to brown.
