Ever noticed how most tacos tend to be meat-heavy? If so, you’re not alone. While there are plenty of options for vegetarians and vegans to enjoy a meal out in the real world, it’s a bit harder to find healthy taco recipes. Whether you’re a vegetarian or a vegan, this recipe is a great way to incorporate the flavors of buffalo into your meal without the meat.
No, I didn’t misspell buffalo—Buffalo cauliflower goes by that name because it is a cousin of the cauliflower and similar in shape, and it has a mild taste and is packed with health benefits.. Read more about roasted cauliflower tacos and let us know what you think.
Crunchy, spicy, and vegan Tacos with Baked Buffalo Cauliflower
I like include plant-based meals in my diet, but I make sure they are delicious and satisfying.
These Baked Buffalo Cauliflower Tacos tick both of those boxes since they’re flavorful and leave you feeling full.
Cauliflower Florets, Buffalo Sauce, Panko Bread Crumbs, Tortillas, Ranch, Cabbage, and Avocado are the ingredients for these tacos.
Crispy Buffalo Cauliflower Recipe
I’ve tried a few different ways to make baked buffalo cauliflower and this is my favorite.
We’re using toasted panko bread crumbs and your preferred buffalo sauce. If you’re unfamiliar with panko, it’s a popular Japanese bread crumb that gives meals a light, airy bite. If gluten-free panko is required, it may be found.
While the oven is preheating to 400 degrees, toast the panko to make it more crispier.
Then we’ll dip each cauliflower floret in buffalo sauce, or you may mix all of the ingredients in a dish and cover all of the cauliflower.
Each cauliflower floret is covered in buffalo sauce and then sprinkled with panko before being put on a baking sheet. You don’t need to cover the whole floret; just enough to give a layer of crunch is adequate.
Bake the cauliflower for 20 minutes at 400 degrees, then broil for 2 minutes to add even more crunch.
Putting the Tacos Together
Always warm up your tortillas before assembling a taco, according to the Taco Golden Rule. Both maize and flour tortillas may be warmed in the oven or on the stove according to this guideline. Wrap them in foil or keep them warm in a tortilla warmer.
On the bottom of the tortilla, layer some shredded cabbage or lettuce and a squeeze of lime. Then top with the baked buffalo cauliflower, ranch (vegan if desired), chopped avocado, and cilantro.
Is it possible to reheat Buffalo Cauliflower?
It’s preferable to eat the Buffalo cauliflower straight soon, but if you have leftovers, keep everything separate.
In the oven, toaster oven, or air fryer, reheat the buffalo cauliflower. If you reheat them in the microwave, they will get mushy.
I recommend storing them in the fridge for no more than two days.
Additional toppings like as chopped onions, celery, and carrots are also delicious!

Cauliflower should be washed and chopped into even-sized florets. Place buffalo sauce in a small dish and dip cauliflower florets in it with a fork, shaking off excess, then topping with panko. Alternatively, combine all of the buffalo sauce with the cauliflower in a mixing dish and toss to coat evenly. Then, put each floret on a baking sheet and cover with panko. This method is quicker, but the cauliflower does not receive panko on both sides.

To obtain additional crunch and color, bake cauliflower for 20 minutes and then broil for 2 minutes. Remove the dish from the oven.

Toasted tortillas may be warmed in the oven or on the stove. Using a tortilla, layer cabbage or lettuce with a splash of lime juice. Combine the buffalo cauliflower, ranch dressing, diced avocado, and cilantro in a mixing bowl.
