CHOCOLATE CARAMEL CAKE MIX COOKIES

Only four ingredients are used to make these Chocolate Caramel Cake Mix Cookies, one of which being the Rolo in the center! They’re incredibly simple to prepare, and the gooey caramel cores make them extremely scrumptious!
I adore baking cookies from scratch and do so most of the time, but occasionally I simply don’t have the time and need a shortcut. Especially when my children all want to pitch in! I just found this recipe, and it’s quickly become a family favorite—the kids love to help create the Rolos-filled cookies, and they’re tasty. I challenge you to eat just one, particularly while they’re still warm and fresh from the oven!
COOKIES MADE WITH CHOCOLATE AND CARAMEL
- 1 chocolate cake mix box
- 1/2 cup softened butter
- 1 egg
- 36 Rolo candies (about 3/4 of a 12 ounce package)
- Combine cake mix, butter, and egg in a large mixing basin until thoroughly mixed.
- Scoop out approximately a spoonful of dough at a time and wrap it around a Rolo candy to create a ball. Make sure you have enough dough to completely cover the Rolo.
- Place dough balls on a cookie sheet that has been buttered. (When preparing cookies, I prefer to use silicone baking mats, particularly for these, since some of the caramel will surely seep out of the bottom of some of the cookies.)
- Preheat the oven to 375°F and bake the cookies for approximately 8 minutes. Allow for a few minutes of cooling time before eating! (While the cookies are delicious when fully cooled, there is something special about warm caramel, so be sure you enjoy at least one while they are still warm!)

We aren’t the world’s most “sporty” family, but we had the opportunity to acquire cheap tickets to watch the Tacoma Rainiers play, and we thought it would be great to take the kids to a real baseball game. The weather was perfect, the kids had a great time during the game, and the Rainiers won — they even got to go around all of the bases at the conclusion. We don’t know whether baseball will ever be our favorite sport, but we had a wonderful day and can now check “watch baseball game” off our family bucket list.
