Let’s start with the Mess-Free Crispy Bacon. Bacon that is uniformly cooked, lays flat, crisps up well, and is easy to clean up! This is how I’ve been cooking bacon for years, and now that we have a new hood, there’s no residual bacon odor in the house. Begin by preheating your oven to 400 degrees Fahrenheit, and let it to preheat for a few minutes after the indicator has gone off to verify that it is at that temperature. You’ll need a baking sheet and rack set similar to this:

I use about 1.5-2 eggs per a burrito. Crack eggs, whisk aggressively, and pour into pan. There should be No sizzling! If it’s sizzling, your pan is too hot. It will seem like the eggs are not cooking, but gently move your spatula around the pan every 30 seconds or so, and you will see the eggs start to cook.   • Microwave flour tortillas for 20-30 seconds, or until soft. Wrap scrambled eggs, cheese, and bacon pieces firmly in a tortilla. I also like to add some salsa, spicy sauce, or avocado to it.
