Instructions:
- Preheat the oven to 450 degrees Fahrenheit. In a large cast iron pan, melt the butter or vegetable oil over medium-high heat.
- Increase the heat to medium-high and toss in the onions. Season to taste with salt and pepper, then cover with the lid. Cook, stirring periodically, for 10-15 minutes, or until onions are very tender and beginning to caramelize.
- Half of the pork rind and cheese mixture should be sprinkled over the onions. Press 6 tiny nests into the mixture with the back of a spoon and crack 1 egg into each.
- Add the remainder of the breadcrumbs and cheese mixture, seasoning with salt and pepper.
- Cook for 5 minutes, or until the eggs are barely firm to the touch. Turn the grill to high and cook for 1 minute on the top. If preferred, top with more cheese and serve immediately.
