Here’s my disclaimer: I’m a mayonnaise snob. Duke’s Mayo is my absolute favorite. I’m not sure why I’m telling you this. Because I was going down the aisle of my local supermarket when I came upon a bottle of Duke’s barbecue sauce! I knew I had to give it a go, but I wasn’t sure how. It was then that I began to imagine a variety of delicious tastes that might be blended to create a delicious and full dinner! I love the inclusion of pasta since it adds a surprise aspect to the meal that most people don’t utilize with BBQ but should! You’ll see why after you try it.

What is the best method for preparing bacon?

I’ve experimented with cooking bacon a lot over the years. We eat it nearly every week. The best method, in my opinion, is as follows: Place each slice of bacon side by side on a baking sheet with sides that has been greased. They may be in close proximity but not overlap. Place in a VERY VERY VERY VERY VERY VERY VERY VERY VERY Preheat the oven to 375 degrees Fahrenheit and cook the bacon for 20 to 25 minutes, depending on how crispy you want it. This is a really simple technique with very little mess! That’s all there is to it!

Is it possible to prepare this ahead of time?

Absolutely! You may prepare this meal up to 48 hours ahead of time. Simply follow the recipe card’s directions until you get to the baking phase. Refrigerate for up to 2 days before cooking by covering with an airtight lid. It’s ideal for a hectic day when you know cooking would be difficult. There will be no changes to the textures or tastes! When you’re ready to eat, bake as directed!

Ingredients for our Pasta and BBQ Chicken Casserole:

  • Chicken Shredded
  • Barbecue Sauce
  • Cheese that has been shredded
  • Bacon
  • Cream of Tartar
  • Tomatoes, diced (Del Monte)
  • Pasta
  • Seasoning from the ranch

How to prepare our Pasta and BBQ Chicken Casserole:

Preheat the oven to 375 degrees Fahrenheit.

Combine the barbecue sauce, sour cream, and dry ranch seasoning in a large mixing basin. Mix until all of the ingredients are evenly distributed.

Add the shredded chicken, chopped bacon, 1/2 of the cheese (save the rest for the topping), sour cream, and diced tomatoes to the same bowl after everything has been combined. Before adding the tomatoes to the mixture, make sure they’re completely dry.

To thoroughly mix, stir everything together.

Spread the chicken mixture equally in a greased 9 x 13 casserole dish. The remaining cheese should be sprinkled on top. You may easily add extra cheese if you and your family like it! Drizzle about a quarter cup of BBQ sauce on top.

  • One of the reasons I like this BBQ sauce is because it comes in a squeeze container, which makes the drizzling portion of the recipe a breeze. If you don’t have a squeeze bottle, pour the sauce into a measuring cup and pour equally over the casserole.

Cover and bake for 25 minutes. The cheese will be bubbling and delicious. Remove the dish from the oven and serve!

Ingredients

  • Colby Jack Cheese (about 2-3 cups)
  • 1 Diced Tomatoes with Onions and Green Peppers (14.5oz)
  • 1 tbsp ranch seasoning (dry)
  • 16 oz. cooked penne pasta (1 box)
  • 1 quart of sour cream
  • 1 cup cooked bacon, chopped
  • 1 gallon barbecue sauce
  • 3 cups cooked chicken (about 1 1/4 pound)

Instructions

  1. Preheat the oven to 375 degrees Fahrenheit.
  2. Combine the sour cream, ranch seasoning, and BBQ sauce in a large mixing basin. Mix.
  3. Combine the cooked chicken, cooked pasta, 1/2 cup cheese, chopped bacon, and drained canned tomatoes with the BBQ sauce.
  4. In a greased 9 x 13 baking dish, spread the ingredients.
  5. Top with the remaining cheese and a quarter cup of BBQ sauce.
  6. Bake for 25 minutes, uncovered.
  7. Enjoy!
