Butter chicken is my all time favorite Indian dish. I love the way the flavors of the sauce marry with the succulent chunks of chicken and the crunchy texture of the breaded pieces. She was continually tasting the sauce, throwing in various spices, adding water to loosen it up, and cinnamon sticks and bay leaves were a must-have. However, it seemed to be a little more difficult than I was ready to tackle. So, without further ado, I offer to you the simplest butter chicken dish you’ll ever make or want to make. I reduced the quantity of spices used to make it easier to make without losing taste, plus it’s also keto-friendly!

Keto Butter Chicken

For its simplicity and genuine taste, our keto butter chicken has been a long-time favorite.

Instructions:

  • Cut the chicken into bite-sized pieces and toss it in the turmeric, ginger, salt, chili powder, and cinnamon to coat. Place in a dish and set aside.
  • Melt the butter in a pan over medium heat. Dice the onion and garlic and add them to the pan as the butter melts. Cook, stirring occasionally, until the onions are transparent and aromatic, about 2-3 minutes.
  • Raise the heat to medium-high and add the chicken to the pan. It should be nearly completely cooked through – the exterior should be white – and this should take approximately 3-5 minutes.
  • Add the heavy whipping cream and tomato paste after the chicken seems to be nearly done. Mix in the tomato paste with a spatula until it flows smoothly into the heavy whipped cream. At this stage, it should be orange in color. Reduce the heat to medium-low and cook for 5-7 minutes, covered.
  • Remove the cover and mix everything together. You should be able to consume the chicken now that it is completely cooked. If you want a thicker curry sauce, let it to reduce with the top off until it achieves the desired consistency.
  • Serve with cauliflower rice or low-carb naan. Enjoy!
  • NOTE: Butter chicken may be kept refrigerated for up to 10 days and frozen for up to 2 months in an airtight container. For a greater fat content, use chicken thighs instead of breasts.
