However, it seemed to be a little more difficult than I was ready to tackle. So, without further ado, I offer to you the simplest butter chicken dish you’ll ever make or want to make. I reduced the quantity of spices used to make it easier to make without losing taste, plus it’s also keto-friendly!

Of course, you can use any meat in this dish; lamb is usually a favorite, as is paneer for a vegetarian option, but I like chicken due to its versatility. Keto Butter Chicken

For its simplicity and genuine taste, our keto butter chicken has been a long-time favorite.

Instructions:

  • Cut the chicken into bite-sized pieces and toss it in the turmeric, ginger, salt, chili powder, and cinnamon to coat. Place in a dish and set aside.

  • Melt the butter in a pan over medium heat. Dice the onion and garlic and add them to the pan as the butter melts. Cook, stirring occasionally, until the onions are transparent and aromatic, about 2-3 minutes.

  • Raise the heat to medium-high and add the chicken to the pan. It should be nearly completely cooked through – the exterior should be white – and this should take approximately 3-5 minutes.

  • Add the heavy whipping cream and tomato paste after the chicken seems to be nearly done. Mix in the tomato paste with a spatula until it flows smoothly into the heavy whipped cream. At this stage, it should be orange in color. Reduce the heat to medium-low and cook for 5-7 minutes, covered.

  • Remove the cover and mix everything together. You should be able to consume the chicken now that it is completely cooked. If you want a thicker curry sauce, let it to reduce with the top off until it achieves the desired consistency.

  • Serve with cauliflower rice or low-carb naan. Enjoy!

  • NOTE: Butter chicken may be kept refrigerated for up to 10 days and frozen for up to 2 months in an airtight container. For a greater fat content, use chicken thighs instead of breasts.
