Stir Fries: Why We Love Them!

It’s simple to see why, particularly now that we’re parents, we like one-pan stir fries. You can use up any ingredients on the brink of going bad in your fridge, it takes less than an hour to prepare, and it’s always tasty.

When I prepare my meals for the week ahead on Sunday evenings, I usually include a simple chicken or beef stir fry. They never let us down, and our whole family, including our 13-month-old son, enjoys them!

Is It Better To Marinade Or Not To Marinade?

Unless you’re pressed for time, this isn’t even a question you should be asking yourself! Tossing in spices while cooking doesn’t provide the same depth of flavor as marinating meat.

The acidity of the meat, in this instance apple cider vinegar, enables the aromas to permeate while also tenderizing it. If the marinade doesn’t already call for it, we prefer to add some fat. Finally, we believe that using fresh foods is essential. When it comes to taste, powdered garlic and ginger aren’t going to cut it.

Patience is a virtue when it comes to stir-frying.

Wouldn’t you agree that patience is the most difficult virtue to master? Especially when it comes to food service. When preparing a stir fry or dish with a lot of different textures, you need to make sure the timing is correct and that you cook for a long enough time.

Adding the vegetables first to this stir fry gives them time to simmer, release their natural juices, and form a foundation. Broccoli, in particular, takes a long time to cook, so start preparing it as soon as possible.

The chicken and marinade will then add liquid to the pan, allowing the vegetables to soften and cook at the same time as the chicken. Stir fries typically take 10-20 minutes to cook. If all of the liquid has evaporated and your vegetables need more cooking time, feel free to add a dash of water.

Stir-fried Keto Chicken

This Keto Chicken Stir Fry is tender, delicious, and quick to prepare any night of the week in under an hour!

Time to Prepare: 40 minutes

Time to prepare: 20 minutes

Instructions:

  • In a plastic zip top bag, combine the sliced chicken, coconut aminos, garlic, apple cider vinegar, ginger, and avocado oil and marinate for at least 30 minutes.

  • In a large wok or pan placed over medium-high heat, heat 2 tablespoons avocado oil, then add all the vegetables and sauté for 3-5 minutes, until soft. At this stage, the vegetables will not be completely cooked.

  • Push the vegetables to the side of the skillet and toss in the chicken with the marinade.

  • Allow for 2-3 minutes of cooking and crisping before mixing everything together. Allow for 10-15 minutes of cooking time, or until the marinade has disappeared and everything is thoroughly cooked.

  • Taste and season with more salt if necessary.

  • Remove from the fire and drizzle with sesame oil, swirling to incorporate. Serve immediately, garnished with sesame seeds if preferred.
