MINT OREO PUDDING COOKIES

The Mint Oreo Pudding Cookies are incredible! I started making these Cookies & Cream Cookies with Oreo Pudding a few years ago, and they’ve been one of my favorite cookies ever since. I was about to make these a few days ago when I realized I had some Mint Oreos in the pantry and decided to create a mint version. Plus, St. Patrick’s Day is approaching, and I’m sure I’ll need to create a green treat soon! I just added a pinch of mint and some food coloring to my original recipe, and the results were fantastic.

These cookies are very wonderful, and I love how the pudding enhances the Oreo taste while softening the cookies. Although most of my favorite cookies include pudding in the dough, here are some additional techniques to ensure that your cookies are always soft, chewy, and wonderful!

  • Do not overwork the dough or over-flour it.
  • Make sure the butter is softened but not melted before using. If you melt the butter, the consistency of the cookies will totally alter, and they will become flat and crunchy. 
  • Even if the center seems slightly underbaked, bake cookies for the shortest time possible. I’ve made these cookies a few times now, and 10 minutes appears to be the ideal length of time for this recipe. To finish baking, leave cookies on baking sheet for one to three minutes before transferring to cooling rack.
  • Soft cookies should be stored in an airtight container.
  • Soft chewy cookies should not be stored alongside crisp cookies.
  • Instead of dark-colored cookie sheets, use shining metal ones. I’ve just started using silicone baking mats for all of my cookie baking, and I love them! The cookies simply peel away from the mats, and your cookie sheets remain spotless as well!

  • 1 cup softened butter
  • a half cup of brown sugar
  • 1 pound of sugar
  • 1 pkg Oreo Cookies & Creme Pudding Mix (4.2 oz)
  • 2 eggs
  • 1 teaspoon extract de vanille
  • 1 teaspoon of mint essence
  • a quarter cup of flour
  • 1 teaspoon of baking soda
  • 10-12 drops green food coloring, 3 drops blue food coloring
  • 15 Oreo cookies, roughly crushed (you want large pieces!) (or normal Oreos – they work well too!)
  1. Cream the butter and sugars together with a hand mixer. Mix in the pudding mix until everything is thoroughly combined.
  2. Mix in the eggs, vanilla, and mint essence well.
  3. Continue mixing in the flour and baking soda.
  4. Mix in the food coloring until it reaches the desired color throughout the dough.
  5. Add the Oreo cookie pieces and mix well.
  6. Drop cookies by rounded teaspoonfuls onto a greased cookie sheet (I use a cookie scoop). Preheat oven to 350°F and bake for 10 minutes. Enjoy!

Ingredients

  • 1 cup softened butter

  • 1 pkg Oreo Cookies & Creme Pudding Mix (4.2 oz)
  • 2 eggs

  • Regular Oreo cookies or 15 Mint Oreo cookies both work well. , roughly crushed (large pieces are desired!)

  • Mix in the eggs, vanilla, and mint essence well.

We decided to use marbled shaving cream to color our Easter eggs this year after seeing it all over Pinterest. We used Cool Whip instead of shaving cream since we didn’t want to eat eggs that had been dipped in shaving cream. The eggs may not have been the most beautiful we’ve ever created, but the kids have never had so much fun coloring eggs, and they even ate some of the Cool Whip after they were finished!
