  • 1 tablespoon of butter
  • 2 tbsp. sour cream
  • 3 Yolks from an Egg
  • 5 beaten egg whites
  • 1 teaspoon of salt
  • 12 CUP | 100 GRAMS SUGARS
  1. Cut the chocolate into tiny pieces and combine with the butter and cream in a heatproof dish. Melt in a water bath until completely smooth. Allow to cool for a few minutes before serving.
  2. In a mixing dish, combine the 3 egg yolks, melted chocolate, butter, and cream. Mix the egg yolks into the chocolate with a rubber spatula until you have a smooth, shiny mixture; put aside.
  3. In the bowl of a stand mixer, or a large mixing bowl if using a hand mixer, place the 5 egg whites. Add the salt and whisk on medium speed until the eggs are foamy. Increase the speed of the mixer until the egg whites reach the soft peak stage.
  4. While mixing on high, gradually add the half cup of sugar to the egg whites. Mix for another 3-5 minutes, or until they reach the hard peak stage.
  5. Using the rubber spatula, combine a third of the beaten egg whites with the chocolate mixture. Fold in the remaining two thirds gently until well mixed.
  6. Fill greased and sugared ramekins halfway with the chocolate soufflé mixture. Flatten the tops using your thumb and run it around the rim. Bake for 12 minutes at 200°C | 400°F for a molten center or closer to 15 minutes for a fully set center.
  7. Serve the soufflés with whipped cream and powdered sugar as soon as they come out of the oven.
