While many of my friends love cooking and baking, I’m not one of them. A few years ago, I bought my first crock pot and started using it regularly to whip up dinners after work. Then, when I found myself with a little extra cash, I bought a cast iron skillet for things like searing chops or frying potatoes. Place chopped peppers and onions on a sheet pan, top with chicken, drizzle with extra virgin olive oil, and season with fajita seasoning! Dinner is ready after 30 minutes in the oven!

In the Tucker household, Mexican cuisine is a perennial favorite. It’s almost a food category in and of itself. We would have to plan ahead for fajitas because we were short on time. That is no longer the case! What I like about this recipe is that I can toss everything in the oven and go do something else for 30 minutes. When the timer goes off, all that’s left to do is rough cut the chicken and stuff it into a tortilla for supper!

What are some excellent fajita toppings?

There are so many delicious toppings for fajitas. Cheese is the most popular option. To add some additional heat, we use Monterey Jack or pepper jack cheese. Salsa, sour cream, lettuce, tomatoes, queso, black olives, and guacamole are all excellent toppings. We like to sprinkle some rough-chopped cilantro on top of our fajitas.

Our One-Pan Chicken Fajitas are made with the following ingredients:

  • 1 green, 1 red, and 1 yellow bell pepper
  • 1 medium sweet onion
  • 1 fajita seasoning packet
  • 2 pound tenderloins of chicken

How to do it:

Preheat the oven to 350 degrees Fahrenheit. Set aside a baking sheet that has been greased.

All three peppers should be washed and sliced into strips. After that, thinly slice the onion.

Arrange the veggies in an equal layer on the baking sheet. The chicken tenders should then be washed and dried. Assemble them on top of the vegetables.

Drizzle the olive oil over all of the ingredients in an equal layer. Last, add the fajita seasoning.

Preheat oven to 350°F and bake for 30 minutes. Remove the pan from the oven when the timer goes off.

Cut the chicken into strips and serve on a tortilla right away! Add your favorite fajita enhancers on top!

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Grease a baking sheet with cooking spray.
  3. Place all of the vegetables, cut into strips, on the baking sheet.
  4. Then add the chicken tenderloins on top.
  5. Drizzle olive oil over the top and season with fajita seasoning.
  6. Preheat oven to 350°F and bake for 30 minutes.
  7. Slice the chicken into strips and combine all of the ingredients on a tortilla.
