  • In a 6-quart saucepan, add 5 quarts salted water.
  • 6 tablespoons extra-virgin olive oil with an excellent flavor
  • 12 big red onion, thinly cut halfrounds
  • salt and black pepper, freshly ground
  • 6 finely sliced big garlic cloves
  • 3 tablespoons coarsely chopped fresh flat-leaf parsley leaves, tightly packed
  • 1 tablespoon tomato paste
  • 12 teaspoon Tabasco sauce or spicy chile vinegar, or more to taste

  • Cannellini or Great Northern beans, washed and drained in two 15-ounce cans
  • 12 pound fusilli (corkscrew pasta; whole wheat or dry legume type recommended; see Imported Italian Pasta, opposite) imported from Italy
  • 12 cup Parmigiano-Reggiano or Pecorino Romano cheese, grated
  • 1 can tuna packed in olive oil, 6 oz., partly drained (optional)

Instructions:

This is a treasure of a kid’s spaghetti, with squiggly noodles and tomato.

  • Bring a pot of salted water to a rolling boil.
  • In a 12-inch straight-sided saut pan, combine the oil and onions and cook over medium heat. Â Season the onions with a liberal quantity of salt and pepper. Sauté the onions until they are softened. Combine the garlic, parsley, tomato paste, chile vinegar, and â…” cup water in a blender. Stir and cook until the water has almost evaporated.
  • Fold in the beans with a wooden spatula and cook for 2 minutes to allow them to absorb the flavors. Â Season to taste, make any required adjustments, then take the pan from the heat and cover.
  • Place the pasta in a pot of boiling water and cook for 10 minutes, or until it is stiffer than you like. Save approximately 1 cup of the pasta water, then drain the pasta in a strainer right away.
  • Reheat the sauce, stirring in the saved cup of pasta water. Stir slowly, scraping off any glaze from the pan’s bottom. Cook for a minute or two to combine the flavors and decrease the pasta water somewhat. Fold in the pasta and heat for a few minutes. Season with salt and pepper after incorporating the cheese. Place the spaghetti in a serving dish and fold in the tuna if desired. Serve right away.
