Vegan Salsa Verde Pasta |

Getting creative with vegetables is a great way to add new veggies to your diet, but if you’re new to cooking, it can sometimes be tricky. One of the biggest challenges is that because vegetables have a mild flavor, you have to get creative with a fresh salsa verde recipe to get the right taste and texture.

Hard and soft vegetable-based protein is a revolutionary way to get a balanced, complete protein. While many plant-based eaters will work hard to make sure they are getting enough protein in their diet, many will turn to plant-based proteins for a boost. These foods (such as soy, wheat, and rice) do a good job of providing the protein we need, but they have a number of disadvantages that make them less than ideal.

Let’s face it, we all love Mexican food. But, if you think about it, there are good vegan dishes you can make that are just as tasty as the real thing! Today we’re going to focus on salsa verde pasta, one of my favorite vegan dishes. It’s a bit time consuming to prepare because it requires a lot of spices, but I promise that the result is well worth the effort.. As the mother of two picky eaters, I’m constantly searching for new methods to add additional nutrients to my children’s meals. My kid is willing to try almost any meal. My daughter, on the other hand, is a fussy eater who refuses to consume many veggies.

However, I’ve discovered that including her in the process increases her interest in what I’m preparing. Vegan Salsa Verde Pasta Recipe

To begin, bring a pot of salted water to a boil and cook the pasta until it is just before al dente, about 6-7 minutes. We don’t want the pasta to be overdone since we’ll be baking it. Drain and put aside the pasta.

Create the salsa verde next; see this article for instructions on how to make homemade salsa verde. I made it mild so that my children could eat it. Although making salsa verde from scratch is not difficult, if you are short on time, you may use store-bought salsa verde.

While my children consume dairy, I strive to keep dairy to a minimum in my diet. As a result, I’m constantly searching for methods to reach an agreement. I’ve been experimenting with more plant-based sauces, and my family has been enjoying cashew-based sauces with gusto. If you’re not vegan or lactose intolerant, sprinkle Monterey Jack or mozzarella cheese on top of the spaghetti before baking. But, as someone who has tried a lot of dairy-based sauces, I can tell you that this cashew sauce is a fantastic alternative!

To make the cashew sauce, combine cashews with 1 cup vegetable stock (or chicken stock if you’re not vegan). Bring to a boil, then turn off the heat, cover, and set aside for 15 minutes. Then, in a high-powered blender or food processor, puree everything until smooth. For approximately 40 seconds, I mixed. It’s incredibly smooth and creamy when it’s done!

Now it’s time to assemble the pasta bake. Cook the American Beauty SuperGreens® Rotini pasta in a casserole dish sprayed with cooking spray. 1 cup salsa verde, stirred thoroughly Then, using a spatula, spread the cashew sauce evenly over the top.

Cover and reheat in a 350°F oven for 15-20 minutes, or until well warmed.

The recipe turns out creamy and tangy thanks to the salsa verde, and the rotini pasta coils simply soak up all of the flavor! If your kids are fussy about things like that, you may garnish the meal with chopped cashews and cilantro or leave them out entirely.

Instructions 

  • Preheat the oven to 350 degrees Fahrenheit.

  • Cook the American Beauty SuperGreens® pasta in a casserole dish sprayed with cooking spray. 1 cup salsa verde, stirred thoroughly Then, using a spatula, spread the cashew sauce evenly over the top. Cover and reheat in a 350°F oven for 15-20 minutes, or until well warmed.

  • Chopped cilantro and cashews are an optional garnish.
