Carne Asada –
It’s a lovely day here in Los Angeles, CA. The weather is mild, cool and windy, which makes this time of year perfect for grilling. This week, I decided to make some Carne Asada with my sous-chef, Robert. We attended the event at our local farmers market where many chefs and foodies were there. It was a good time but our favorite part of the event was tasting so many great things.
Carne asada is a traditional Mexican meat dish that is marinated and grilled. The marinade is comprised of spices like cumin, oregano, chili flakes, and paprika. The more time you spend on this, the better it will taste.

I’m a huge fan of it and never get tired of it! Jeff is in the same boat as me.
No matter what hour our aircraft arrives when we return for trips, our first stop is the closest Robertos, Santanas, Adalbertos — you get the idea — for a carne asada burrito.
When we relocated to Sardinia, Italy in 1999, it didn’t take long for us to realize how much we missed carne asada. We decided to learn how to manufacture them ourselves.
Because, while living in San Diego, we never cooked carne asada. It was purchased by us. It’d be similar to producing my own wine in Tuscany. Why bother when you can have exquisite perfection simply down the street?
Necessity, as they say, is the mother of innovation. We were in desperate need of carne asada!
Jeff and I experimented with several marinades and types of beef in our quest for the ultimate carne asada dish. The flank steak is our favorite cut of carne asada.
Tenderloin is also delicious. We know this because for our Cinco de Mayo celebration in 2002, we ended up with 10 pounds of tenderloin instead of the flank I THOUGHT I was buying from the Italian butcher. Attempting to speak a foreign language may lead to a plethora of… shocks!
The tenderloin was delicious, but the price was exorbitant!

Ingredients
- flank steak, 3 pound (can also use skirt steak, tenderloin or round steak)
- 1/3 cup freshly squeezed lime juice
- 1 white onion, large (sliced thin)
- a third of a teaspoon of garlic powder
- 4 garlic cloves (fresh) (chopped)
- 2 tbsp. oregano
- a pinch of salt and pepper

Remove any extra fat from the flank steak and season it on both sides with salt, pepper, garlic powder, and oregano.
In a big ziplock bag, place the seasoned steak. Lime juice, sliced onions, and chopped garlic are added to the mix. Make sure all sides of the steak are covered with spices. Refrigerate overnight to marinate. Cook for 4 minutes on each side on high heat on the grill, then continue to cook until the meat reaches 130°F for medium rare. Allow 10 minutes for the cooked steak to rest before chopping into tiny pieces against the grain. Serve with corn or flour tortillas, cheese, sour cream, salsa, olives, cilantro, jalapenos, and other toppings of your choice. A squeeze of lime juice is also delicious! |
