Because they start with a cake mix, Strawberry Cheesecake Cookie Bars are very simple to prepare. I like baking cake mix cookies since they usually just need 3-4 ingredients and taste great. I’ve been obsessed with cookie bars lately since they’re so much simpler to prepare than regular cookies because you don’t have to scoop out individual cookies. Plus, instead of wrangling several cookie sheets in and out of the oven, you can cook the whole batch at once.

Strawberry Cheesecake Cookie Bars Ingredients

1 packet of strawberry cake mix

2 eggs

1/2 cup melted butter

8 oz. softened room temperature cream cheese

1 tablespoon of sugar

1 tsp vanilla extract

sprinkles to use as decorations

Strawberry Cheesecake Cookie Bars Recipe

Combine the cake mix, eggs, and melted butter in a mixing basin. Pour into a greased 9X13 pan after mixing until smooth.

In a separate dish, mix together the cream cheese, sugar, and vanilla extract until smooth. Place tablespoon-sized dollops of cream cheese filling on top of the cake batter in the pan and distribute evenly.

Swirl the cream cheese filling into the cake batter using a knife or skewer. Because the cake batter is thicker than cookie dough, swirling the cream cheese filling in requires some effort. Don’t worry if it doesn’t seem very beautiful right now; it’ll turn out great after it bakes! Sprinkles may be added to the top if desired.

Cook for 20-23 minutes, or until toothpick inserted in middle comes out clean. The borders of the cake should have a light golden brown color. Allow the bars to cool fully before slicing and serving.
